Daal bati chokha

Hi foodies, hope you all are doing good. Today I’m sharing a rustic and traditional dish of stuffed whole wheat dough balls, where the stuffing is a spiced mix of roasted gram flour or sattu. this recipe comes from bihar and jharkand region in India. You can deep fry the batis in oil,baked in oven or tandoor but I use to bake in pressure cooker and it’s very easy so let’s start 😊

Ingredients for bati: recipe for 4

.300 gm whole wheat flour

.1/2 teaspoon of salt

. 1 and half cup water

Ingredients for stuffing:

.150 gm Sattu/roasted gram flour

.1 finely chopped onion

.2 green chilli finely chopped

.1 tablespoon finely chopped garlic

.1/2 teaspoon nigella seed/kalonji

.1/2 teaspoon cumin seed/jeera

.1/2 teaspoon fenugreek seeds/methi

.1/2 teaspoon fennel seed/saunf

.1/2 teaspoon carom seed/ajwain

.1/2 spoon of turmeric/haldi

.1 tablespoon of mustard oil

.1/2 tablespoons lemon juice

. Salt as per taste

Ingredients for daal:

. pigeon pea/toor daal

.turmeric powder

.salt

.water

. onion chopped

.Tomato chopped

.green chilli and garlic finely chopped

. coriander

.ghee

Ingredients for chokha/bharta:

.2 large size round brinjal/eggplant/baingan

.2 large boiled potato

.2 medium size roasted tomato

.2 green chilli

.1 tablespoon of finely chopped garlic

.1 teaspoon of mustard oil

Method for making daal/pulse soup

Rinse the lentils in water for a couple of times.then add the lentils in a pressure cooker along with salt and turmeric. Pressure cook for 5 to 6 whistle on medium flame till they cook completely.

Now heat the ghee in a pan ,add the cumin seed let them splutter.

Add green chilli,garlic fry them for 20 seconds then add onion and tomato fry for another 3 minute now pour the cooked lentil in this mixture and let them simmer for sometime. Switch off the flame and garnish with coriander.

Now lentil soup/daal is ready👇

Method for making chokha/bharta:

Roast brinjal/eggplant and tomato on direct flame till they cooked completely, let them cool and peel them.

Take a large bowl,add the boiled potatos, roasted brinjal ,tomato,green chilli, chopped garlic,salt and mix them very well with your hand and don’t forget to add mustard oil as it gives a sharp and aromatic flavour. So here your chokha is also ready 👇

Method for making batis:

First of all we will prepare the stuffing. Heat a pan or tawa, add jeera,ajwain,saunf,kalonji and methi.roast all the things for a minute, don’t let them burn.

In a mixing bowl add above roasted spices, onion, garlic, green chilli, Turmeric, salt, mustard oil and lemon . Now mix it well if require you can sprinkle some water but mixture must be semi dry. So here your stuffing is ready 👇

Now take a plate add whole wheat flour, salt,water and make a stiff dough.

Now take a portion of dough and make a medium size ball, sprinkle some dry flour and roll each one about 5 to 6 inches. Place 2 tablespoons of stuffing , pleat the joints and gently make a ball. Batis are all set to bake 👇

Now take a pressure cooker, remove the whistle then grease the cooker with little bit of oil. Cover with lid and let it heat for 10 minutes on very low flame then place the each batis carefully and close the lid.

After 7 to 8 minutes flip the batis on other side and let them bake for another 8 minutes, you can bake 4 to 5 batis at a time or as per the size of your pressure cooker.you can bake it in oven also but trust me it is the easiest way of baking batis.

Now we are all set with our recipe. Serve hot and enjoy this delicious baked batis with daal and chokha😋
